4 boneless, skinless chicken breast halves, thawed
1/4 teaspoon salt
1/8 teaspoon black pepper
6 slices Swiss cheese
4 slices cooked ham
1/2 cup seasoned bread crumbs (if I don't have bread crumbs, I use ground-up Ritz crackers)
butter
PREHEAT oven to 350 degrees. Coat a 7x11 baking dish with nonstick spray.
CUT a deep slit into the side of each chicken breast. STUFF each chicken breast with one slice of ham and one slice of cheese. Place in baking dish.
BRUSH each chicken breast with eggwash (an egg beaten with 1/2 tablespoon water), then sprinkle evenly with breadcrumbs. Put a small pat of butter on top of each chicken breast.
BAKE for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each chicken breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Serve immediately.
